Full-Time Night Shift
Bon Ton Bakery – Edmonton AB

The Bon Ton Bakery and Patisserie is an artisanal bakery that started in 1956. The goal back then and today is to create the finest bread and pastries with quality ingredients and no compromises. We are a cornerstone of the Edmonton baking scene, with successive generations of customers enjoying our product because of our long-standing reputation for quality.  Our work is rooted in classic European techniques that include long fermentation and natural leavening. We bake by hand, utilize state-of-the-art equipment, and value flavour and structure over shortcuts.

POSITION OVERVIEW

We are seeking a bread baker with formal training or equivalent experience who is passionate about quality, consistency, and process. We are an integrated team, and candidates for this role must be able to work collaboratively with respect and care for other team members and our products. 

SCHEDULE

  • Night shift (late evening start)
  • Monday–Friday
  • ~40 hours per week

CORE RESPONSIBILITIES

  • Mixing and dough development
  • Managing preferments and sourdough cultures
  • Monitoring bulk fermentation and final proof
  • Dividing and hand‑shaping dough
  • Scoring and oven work
  • Producing breads, buns, bagels, pretzels, and specialty yeasted products
  • Laminating dough and producing croissants and sweet buns (experience dependent)
  • Maintaining strict quality and consistency standards
  • Working within structured production systems

 IDEAL CANDIDATE PROFILE

  • 2-3+ years of professional artisan bakery experience and/or formal artisan baking training
  • Strong knowledge of fermentation and dough behaviour
  • Comfortable working independently on night shift
  • Professional, reliable, and detail‑oriented
  • Passionate about traditional standards and product excellence

 REQUIREMENTS

  • Ability to lift 20 kg (50 lb) ingredient bags
  • English communication and reading ability
  • Legally eligible to work in Canada (no temporary permit sponsorship)
